Cowboy Cookies

I got this recipe from Desert book. It was mentioned in the book Almost Sisters. Very yummy!

Cowboy Cookies
1 cup shortening (butter flavor Crisco is yummy)
1 cup brown sugar
1 cup white sugar
2 eggs
2 tsp vanilla
1 1/2 to 2 cups flour
1 tsp salt
1 tsp soda
1/2 tsp baking powder
2 cups oatmeal (or more if the dough seems too wet; should be old fashioned kind)
1 cup chopped walnuts
1 cup coconut (not the flaked kind)
1 pkg Nestle's chocolate hunks (chocolate chips work good too)

Preheat oven to 350 degrees. Cream shortening and sugars. Add eggs, both at the same time. Beat well. Add soda, salt, baking powder to flour, then add it all to creamed mixture. Add vanilla. Beating by hand, add nuts, oatmeal, coconut, and chocolate. Drop by teaspoonsful onto a greased (or Teflon) baking sheet. Bake at 350 degrees for 12 minutes. Makes a lot of cookies, depending on how big you want them.
