Easy sweet and sour chicken

I came up with this recipe one night when I was needing something quick for dinner.

Easy sweet and sour chicken

1 bag frozen popcorn chicken
1 bottle sweet and sour sauce of choice (any stir fry sauce works well, my current favorite is Panda Express Orange Sauce)
1 bag frozen stir fry vegetables
rice, cooked

Combine chicken, vegetables and sauce in large skillet. Cook for about 10-15 minutes on low until thoroughly cooked.  Serve over rice.

Brownies to die for

Found this recipe on the back of a Ghirardelli brownie mix. They are super yummy!!! 

Ghirardelli Seven Layer Brownies

1/2 c butter
1 box Ghirardelli Double Chocolate Brownie Mix (or other brownie mix)
1 c shredded coconut (optional)
1 c butterscotch chips
1 c semisweet chocolate chips
1 c chopped pecans
14 oz can sweetened condensed milk

Preheat oven to 350. Coat bottom of 13x9x2 pan with melted butter. Sprinkle brownie mix over butter. Top with coconut, butterscotch chips, chocolate chips, and pecans. Drizzle with sweetened condensed milk. Bake 30-35 min. on until edges are bubbly. Cool thoroughly before cutting.

Healthy Brownies?

When I am at the gym I generally watch 'Live with Regis and Kelly' while running on the treadmill or doing the elliptical. Yesterday they had Jessica Seinfeld on the show. She was promoting her new cookbook about deceiving your children hiding veggies in food that your kids actually will eat. She shared a recipe for brownies that are made with carrots and spinach. I haven't actually tried this recipe, though I do plan on doing so. I just found it to be interesting and wanted to share.

Bibimbap

This recipe was in the "Relish" Magazine that sometimes comes in our local newspaper. We had this at a friend's house a few weeks ago and the kids loved it as well as the adults. It takes a little bit of work, but it is not too bad. If you get the butcher to cut your meat for you it will be faster. It is very yummy.

I doubled this recipe to feed my family of 6. It calls for rice wine, which I could not find at Walmart. I did a little checking on line and you can substitute apple juice or white grape juice for the rice wine.

Peanut Butter-Oatmeal cookies

I cut this recipe out of Woman's Day magazine several years ago. It is a favorite at our house.

Peanut Butter-Oatmeal Cookies

1 stick (1/2 cup) butter or margarine, softened
1 cup creamy peanut butter
1/2 cup packed light brown sugar
1/2 cup granlated sugar
1 tsp. baking powder
1/2 tsp. baking soda
1 large egg
1 tsp. vanilla extract
1 cup each flour and quick-cooking oats
1/2 cup golden rasins (I've never used raisins, blech!)

1. Heat oven to 350. Have cookie sheets ready.
2. In a large bowl with mixer on medium speed, beat butter and peanut butter until creamy. Add sugars, baking powder and baking soda; beat until fluffy. Beat in egg and vanilla until well blended. With mixer on low speed, beat in flour and oats just until well blended. Stir in raisins.
3. Roll level measuring Tbsps dough into 1 1/4-in. balls. Place 1 1/2 in. apart on ungreased cookie sheet. Flatten with tines of a fork, making crisscross design.
4. Bake 10 to 12 minutes until lightly browned. Cool on cookie sheet 1 minute before removing to a wire rack to cool completely.

Recipes I've borrowed from other blogs

I have found a few really yummy recipes from other blogs. I thought I would pass on these great recipes to you!

Deanne at "Fragile Flower" has shared several great recipes on her blog. You can find two of them here. The Chicken Lasagna Florentine is one of my family's new favorites!! I do leave out the salt that it calls for when I make it.

Speaking of lasagna, Carronin posted a great recipe for her famous lasagna awhile back. It is very yummmmmy!

I found this recipe for Hawaiian Chicken Bake at "My so called perfect life". I love the combination of pineapple and stuffing. Mmmmmm. It is also really easy to make and I do love easy!

I hope you enjoy these recipes as much as my family has.

Hearty Six-Can Chili

This is a recipe that came with my Pampered Chef can opener, which I love by the way. I also love this recipe. We like to eat it with tortilla chips and cheese, or with corn bread fresh from the oven.

Hearty Six-Can Chili
1 lb. lean ground beef
1/2 cup chopped onion
2 cans (15 1/2 oz. each) chili beans in sauce, undrained
2 cans (14 1/2 oz. each) diced tomatoes, undrained
1 can (15 oz.) black beans, drained and rinsed
1 can (10 3/4 oz.) condensed cream of mushroom soup
1 teaspoon chili powder

1. Cook hamburger and onion in large pan until meat is no longer pink. Drain, if necessary.
2. Add remaining ingredients to beef mixture. Bring to a boil; reduce heat, and simmer covered, over low heat 30 minutes, stirring occasionally.

Makes 8 servings.
